Set to open its doors to London’s dining scene at the end of November, New York’s coveted Aquavit is set to reignite our obsession with New Nordic cuisine. Sticking with its minimalist Nordic aesthetic, the space has been overseen by the design studio of Swedish-born Martin Brudnizki, whose portfolio in London includes The Ivy, Scott’s and Sexy Fish.

Emma Bengtsson, Executive Chef of the two Michelin-starred Aquavit New York oversees the menu which will be executed by Head Chef Henrik Ritzen (formerly of The Dover Street Arts Club, La Petite Maison and Lutyens).


A seasonally inspired menu will revolve around fresh and locally sourced ingredients such as Butter-Poached Cod with Fennel Aioli and Salt-baked Celeriac Root and Seared Duck Breast with Pickled Quince and Buckwheat Porridge, as well as classic Nordic choices such as Toast Skagen.
